Sear and caramelize
- Preheat oven to 325F, then heat olive oil in a Dutch oven until shimmering. Season the chuck roast with salt and pepper, sear until deeply browned, and remove to a plate.
- Add unsalted butter to the Dutch oven and melt over medium-low heat. Cook onions until deeply caramelized, stirring occasionally, for 30-35 minutes.
- Add minced garlic and cook for about 30 seconds until fragrant. Pour in the dry white wine or beef broth to deglaze, scraping up the browned bits.
Braise the roast
- Stir in 3 cups beef broth, Worcestershire sauce, fresh thyme, and bay leaves. Return the seared roast to the pot.
- Cover and braise in the 325F oven for 3 to 3-1/2 hours, until the meat is fall-apart tender. During braising, avoid uncovering so the liquid stays hot and concentrated.
- Remove the bay leaves, then shred the beef in the broth right in the Dutch oven. Taste and adjust with salt and pepper.
Finish with Gruyere and broil
- Ladle the braised beef and onion broth into bowls. Float toasted baguette on top and cover with shredded Gruyere.
- Broil for 3-4 minutes until the cheese is golden and bubbly. Let stand briefly so the cheese sets before serving.
Notes
For the best caramelized onions, keep the heat at medium-low and stir often so the onions darken without burning. Store leftovers in an airtight container in the refrigerator for up to 3-4 days; freeze up to 2-3 months, then reheat gently and broil fresh baguette and Gruyere if desired. For a lighter option, use reduced-sodium beef broth and cut the butter slightly while still cooking onions long enough to reach deep caramel color.
