Ingredients

For fudgy brownies
  • 1 cup unsalted butter
  • 8 oz dark chocolate
  • 1.5 cup sugar
  • 4 eggs
  • 2 tsp vanilla
  • 1.25 cup flour
  • 0.5 cup cocoa
  • 0.5 tsp salt
For turtle topping
  • 0.5 cup thick caramel sauce
  • 1.5 cup pecan halves, toasted
  • 0.5 cup semi-sweet chocolate chips melted for drizzle
  • 1 flaky sea salt

Equipment

  • 1 sheet pan

Method

Bake and prep
  1. Preheat oven to 350F, then line a 9x13 pan with parchment for easy lifting.
  2. Melt butter and dark chocolate, then cool until warm but not hot before mixing.
Make the fudgy brownie batter
  1. Whisk the cooled butter-chocolate with sugar, eggs, and vanilla until smooth and glossy.
  2. Fold in flour, cocoa, and salt just until no dry streaks remain.
Assemble and bake
  1. Spread the batter evenly in the lined pan.
  2. Drizzle thick caramel sauce over the top and swirl with a knife for a marbled look.
  3. Press toasted pecan halves across the surface so they adhere while baking.
  4. Bake 28-32 minutes at 350F until set with moist crumbs in the center.
Finish
  1. Cool completely so the brownies set before topping.
  2. Drizzle melted semi-sweet chocolate chips over the cooled brownies for a glossy finish.
  3. Sprinkle flaky sea salt over the top to balance the sweetness.

Notes

Pro tip: cool the melted butter-chocolate before adding eggs to prevent scrambling, and swirl caramel lightly for distinct ribbons. Store covered at room temperature up to 3 days or in the refrigerator up to 5 days; freeze up to 2 months (wrap well, thaw overnight). For a gluten-free option, use a 1:1 gluten-free flour blend in the brownie portion.
