Ingredients

For graham or gingersnap crust
  • 2 cup crumbs
  • 0.33 cup sugar
  • 6 tbsp melted butter
For vanilla cheesecake layer
  • 16 oz cream cheese
  • 0.5 cup sugar
  • 2 eggs
  • 0.25 cup sour cream
  • 1.5 tsp vanilla
For pumpkin swirl layer
  • 8 oz cream cheese
  • 0.5 cup pumpkin puree
  • 0.25 cup brown sugar
  • 1 egg
  • 1.5 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 0.5 tsp vanilla

Equipment

  • 1 sheet pan

Method

Prepare the crust
  1. Preheat the oven to 325F, line a 9x13 pan, and press the crumbs, sugar, and melted butter firmly into the bottom. Bake the crust for 8 minutes, until fragrant and set around the edges.
Make the cheesecake layers
  1. Beat the vanilla cheesecake layer ingredients—cream cheese, sugar, eggs, sour cream, and vanilla—until smooth and lump-free. Set aside for assembly.
  2. Beat the pumpkin swirl layer ingredients—cream cheese, pumpkin puree, brown sugar, egg, pumpkin pie spice, cinnamon, and vanilla—until smooth and evenly colored. Set aside for assembly.
Assemble and bake
  1. Pour the vanilla cheesecake mixture over the baked crust and spread it evenly so the surface is level. Dollop the pumpkin mixture in large spoonfuls over top.
  2. Use a knife to swirl dramatically through the dollops to create bold ribbons across the surface. Bake for 32-35 minutes at 325F until the center is just set with a slight wobble.
Chill and slice
  1. Cool the bars completely at room temperature, then refrigerate for 3 hours to fully firm up. Cut into bars and serve chilled for clean slices.

Notes

For the sharpest swirl pattern, use large spoonfuls of pumpkin mixture and drag the knife in confident, dramatic passes rather than tiny circular strokes. Store refrigerated in an airtight container for up to 4 days; freeze only if needed—wrap tightly and freeze up to 1 month. Dietary swap: use gluten-free gingersnap-style crumbs for a gluten-free crust while keeping the filling the same.
