Prep the pan and preheat
- Preheat oven to 350°F and grease and flour a 9x5 loaf pan.
Cream the base
- Cream shortening or butter with sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
Mix in flavor and fruit
- Stir in mashed bananas and vanilla until combined.
Fold in dry ingredients with milk
- Sift flour, baking soda, and salt together.
- Fold the dry mixture into the banana mixture alternating with the milk, just until no dry streaks remain.
Bake
- Pour batter into the prepared pan and bake at 350°F for 60–70 minutes until a toothpick comes out clean and the top is a deep golden brown.
Cool and slice
- Cool in the pan 15 minutes before turning out.
- Rest fully before slicing for the cleanest cut.
Notes
For the cleanest cut and best texture, let the loaf cool fully before slicing; warm banana bread is more likely to crumble. Store covered at room temperature up to 3 days or refrigerate up to 5 days. Freeze sliced loaf (or whole loaf) for up to 3 months. For a dairy-lite option, replace milk with unsweetened plant milk and use butter substitute or dairy-free shortening; flavor stays close, though crumb may be slightly softer.
