Ingredients

For taco potatoes
  • 2 lb Yukon gold potatoes
  • 2 tbsp taco seasoning
  • 3 tbsp olive oil
For taco beef
  • 1 lb ground beef
  • 1 taco seasoning
  • 0.25 cup water
For toppings
  • 1 can (15 oz) black beans warm before assembling
  • 1 cup corn kernels
  • 1.5 cup shredded cheddar
  • Sour cream
  • pico de gallo
  • avocado
  • jalapeño
  • cilantro
  • lime for finishing

Equipment

  • 1 sheet pan

Method

Roast the taco potatoes
  1. Preheat the oven to 425°F, then toss the cubed Yukon gold potatoes with taco seasoning and olive oil until evenly coated.
  2. Spread the potatoes on a sheet pan and roast for 25-30 minutes, stirring once halfway, until crispy and golden on the edges.
Cook the taco beef
  1. In a pan, brown the ground beef over medium-high heat until no longer pink.
  2. Add taco seasoning and water, then simmer for 3 minutes until thickened and evenly seasoned.
Assemble loaded potato taco bowls
  1. Add crispy roasted potato cubes to the bottom of each bowl.
  2. Top each bowl with taco beef, then add warmed black beans and corn.
  3. Layer with shredded cheddar, sour cream, pico de gallo, avocado, jalapeño, and cilantro.
  4. Finish each bowl with a squeeze of lime right before serving.

Notes

For maximum crunch, spread the potato cubes in a single layer on the sheet pan and avoid overcrowding. Store leftovers refrigerated up to 3 days; rewarm potatoes in a hot oven or air fryer to regain crispness. Freezing isn’t recommended because potatoes and toppings soften. For a lighter option, use lean ground beef or swap to ground turkey and reduced-fat cheddar.
