Toast the candied pecans
- Melt the butter in a small skillet over medium heat, then add the pecans and brown sugar. Stir to coat, and watch for glossy clumps starting to form.
- Toast for 3-4 minutes, stirring, until the pecans are fragrant and lightly candied. Cool them on parchment until no longer hot to the touch.
Assemble the goat cheese log
- Place the goat cheese log on a serving board. Position it so the top faces up for even topping.
- Spoon the fig jam over the top, letting it run down the sides. Tilt the board slightly if needed so the jam drapes naturally.
- Scatter the candied pecans and the finely chopped rosemary over the jam. Add a generous, even layer for visible texture.
- Drizzle with honey and sprinkle with flaky sea salt. Finish by serving immediately with crackers and sliced pears.
Notes
Pro tip: let the toasted pecans cool fully so the fig jam stays thick and doesn’t melt into a glaze. Refrigerate leftovers in an airtight container up to 3 days; freeze is not recommended because the goat cheese texture can become grainy. If you want a lighter option, swap to a reduced-fat goat cheese log while keeping the same fig jam and pecans.
