Ingredients

Goat cheese appetizer base
  • 8 oz goat cheese log
Fig jam topping
  • 0.3333 cup fig jam
  • 0.3333 cup pecans, roughly chopped
  • 1 tbsp butter
  • 1 tbsp brown sugar
  • 1 tbsp honey
  • 1 tsp fresh rosemary, finely chopped
  • 1 pinch of flaky sea salt
Serving
  • 1 crackers and sliced pears for serving

Equipment

  • 1 cast iron skillet

Method

Toast the candied pecans
  1. Melt the butter in a small skillet over medium heat, then add the pecans and brown sugar. Stir to coat, and watch for glossy clumps starting to form.
  2. Toast for 3-4 minutes, stirring, until the pecans are fragrant and lightly candied. Cool them on parchment until no longer hot to the touch.
Assemble the goat cheese log
  1. Place the goat cheese log on a serving board. Position it so the top faces up for even topping.
  2. Spoon the fig jam over the top, letting it run down the sides. Tilt the board slightly if needed so the jam drapes naturally.
  3. Scatter the candied pecans and the finely chopped rosemary over the jam. Add a generous, even layer for visible texture.
  4. Drizzle with honey and sprinkle with flaky sea salt. Finish by serving immediately with crackers and sliced pears.

Notes

Pro tip: let the toasted pecans cool fully so the fig jam stays thick and doesn’t melt into a glaze. Refrigerate leftovers in an airtight container up to 3 days; freeze is not recommended because the goat cheese texture can become grainy. If you want a lighter option, swap to a reduced-fat goat cheese log while keeping the same fig jam and pecans.
