Method
Roast and mash the garlic
- Roast garlic cloves in 1 tablespoon olive oil at 400F for 20 minutes, until golden and soft; cool, then mash into a paste.
Build the soup
- Melt butter in a large pot, then sauté onion for 5 minutes until softened and translucent.
- Add the mashed roasted garlic and cook for 1 minute, until fragrant.
- Add chicken broth and cubed potatoes, then simmer for 20 minutes until very tender.
- Blend smooth with an immersion blender, then stir in heavy cream for a creamy texture.
Finish with cheese and herbs
- Reduce heat to low and stir in shredded sharp cheddar until fully melted and smooth.
- Stir in thyme, rosemary, and chives, then season with salt and black pepper to taste.
Notes
For the creamiest soup, blend until completely smooth before adding cheddar, and keep the heat on low so the cheese melts without separating. Store covered in the refrigerator up to 3 days; reheat gently over low heat and stir often. Freezing isn’t recommended because cream-based soups can change texture when thawed. For a dairy swap, use a high-quality lactose-free cream and lactose-free cheddar shreds in the same amounts.
