Prep and preheat
- Preheat the oven to 350°F and grease a 9x5 loaf pan.
- Whisk all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice together until evenly combined.
Mix the batter
- Beat brown sugar, eggs, vegetable oil, applesauce, and vanilla extract until smooth.
- Stir in grated squeezed zucchini and diced apple so the batter shows visible apple bits.
- Fold the dry ingredients into the wet ingredients just until combined; stop when no dry streaks remain.
Bake and cool
- Pour the batter into the loaf pan and sprinkle the cinnamon sugar topping over the top.
- Bake at 350°F for 55–65 minutes, until a toothpick comes out clean and the loaf is golden.
- Cool for 15 minutes before slicing, until the loaf is set and slices hold their shape.
Notes
For best texture, squeeze the grated zucchini very dry so the loaf stays tender and not soggy. Store airtight at room temperature up to 3 days or refrigerate up to 5 days; freeze slices up to 2 months. To make it lower-sugar, replace brown sugar with an equal amount of light brown sugar blend or a 1:1 baking sweetener designed for baking.
