Ingredients

Potatoes
  • 3 lb Yukon gold potatoes Peeled and cubed.
Garlic
  • 2 garlic Use 1 whole head roasted and 1 whole head raw (minced cloves) for the base.
Soup base
  • 1 onion Diced.
  • 4 cup chicken broth
  • 2 cup heavy cream
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil For roasting the garlic.
  • 1 tsp salt
  • 0.5 tsp white pepper
  • 0.25 tsp nutmeg
To serve
  • 1 Croutons
  • 1 chives Fresh, for topping.

Equipment

  • 1 Dutch oven
  • 1 immersion blender

Method

Roast one garlic head
  1. Cut the top off one whole head of garlic, drizzle with olive oil, and wrap in foil for roasting at 400F for 40 minutes until fragrant and softened (visual cue: cloves feel very soft).
  2. Cool the roasted garlic slightly, then squeeze the roasted cloves into a bowl for adding to the soup later (visual cue: creamy cloves come out easily).
Build the soup
  1. Mince the raw garlic cloves from the second whole head of garlic so they’re ready for sautéing.
  2. Melt the unsalted butter in a large pot, then sauté the diced onion and minced raw garlic for 5 minutes until softened (visual cue: onion turns translucent).
  3. Add the chicken broth and cubed Yukon gold potatoes, then simmer for 20-25 minutes until very tender (visual cue: potato cubes break apart easily with gentle pressure).
  4. Blend the soup completely smooth with an immersion blender for a silky texture (visual cue: no visible potato chunks).
  5. Squeeze the roasted garlic into the blended soup and blend again, then stir in the heavy cream (visual cue: soup turns creamy and uniformly golden).
  6. Season with salt, white pepper, and nutmeg, then serve topped with croutons and chives (visual cue: finishing herbs add a fresh green contrast).

Notes

For the smoothest texture, blend while the soup is hot and keep pulsing until completely chunk-free, especially around the bottom of the pot. Refrigerate leftovers up to 3 days in a sealed container; reheat gently over low heat to avoid breaking the cream. Freezing is not recommended because cream-based soups can separate after thawing. Dietary swap: use half-and-half instead of heavy cream for a lighter, less rich result (texture may be slightly thinner).
